Berlin Natural Bakery is nestled in the rolling hills of the largest Amish settlement in the world…Berlin, Ohio. Where the land is rich and its people have deep roots to a simple, natural and healthy lifestyle. Having been born and raised here, we knew the difference between naturally grown farm fresh foods, versus what we could buy in the grocery store, based solely on taste. Over the years, we learned that great taste wasn’t the only benefit to these natural and organically grown foods…but that these great tasting foods were also of great benefit to our health. We know that if it doesn’t taste good, chances are you won’t be eating it. Our customers buy our spelt products for many different reasons. But there is one thing they all agree on…they just plain taste good!

Our goal is not to be all things to all people…our goal is to provide you with the best tasting and highest quality, pure Spelt Products available!

Our opinion:
I personnaly use this bread daily for breakfast and sometimes with meals. I always toast it and it has the most wonderful taste.

About Spelt Flour
There are many different theories as to the origins of the spelt grain. The most popular theory appears to find this grain originating in the Fertile Crescent region thousands of years ago…over the centuries, finding its way throughout Europe. Spelt is an ancient grain and believed to be preceded only by the grains Emmer and Einkorn. Spelt is referred to throughout the Bible, with the earliest reference of it being found in the book of Exodus. Spelten cakes sustained Moses and the children of Israel in their exodus from Egypt. Italians refer to it as “Farro” and is primarily used in gourmet dishes. The Germans refer to it as “Dinkel” and can be found in a wide variety of foods, from bread to beer. Spelt found its way to America, among the valued possessions of its many immigrants.

The Hildegard Practice…Konstanz, Germany
Our never ending search for knowledge about the spelt grain and its many health benefits, led us to The Hildegard Practice. Dr. Gottfried Hertzka M.D., the founder of the clinic is a medical doctor in Germany and author of the best selling book on St. Hildegard medicine, “So Heilt Gott.” He worked clinically with St. Hildegard’s theories for thirty years. Dr. Wighard Strehlow was a research chemist in the pharmaceutical industry in Germany. Since 1984 he has succeeded Dr. Hertzka at the Hildegard Practice in Konstanz. They are co-authors of the book “Hildegard of Bingen’s Medicine.” At the clinic they incorporate the many teachings and beliefs of Hildegard, in the healing process of their patients. They treat every type of illness, from depression to cancer. They consider “pure spelt grain” a key ingredient to treating their patients, and contribute 80% of their healing successes to the spelt diet.

Meeting their patients and learning of the many successes they have experienced using St. Hildegard’s teachings over the years, was an amazing experience. We were fortunate enough to be invited to stay for lunch…where spelt was used to prepare every dish, from salad to dessert in addition to what they refer to as spelt coffee. We are by no means saying that we endorse the clinic, the practitioners or even their practices. But one must assume the thousands of patients they claim to have successfully treated over the past 40 years, would indeed sing their praises.
